Developing gastronomic practices in the Minho region of Portugal

We explore the role of restaurants and food events in promoting local regional gastronomy Minho region Northern Portugal. Interviews with restaurant owners event organizers this mainly rural reveal that innovation is driven by changing consumer tastes, but also constrained expectations low prices. Restaurants maintain a family-run structure, due to lack human resources. The main thrust lies creating convivial atmosphere, there less emphasis on locally produced ingredients. In long run may undermine culture its authenticity, despite perceived importance tradition.
